Ingredients
For the BBQ Chicken:

4 boneless, skinless chicken thighs

2 tbsp olive oil

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp chili powder

1/2 tsp garlic powder

Salt & pepper, to taste

Juice of 1 lime
For the Lactose-Free Lime Crema:

1/2 cup lactose-free sour cream (or lactose-free Greek-style yogurt)

Zest of 1 lime

Juice of 1/2 lime
-
1 tbsp chopped fresh coriander (optional)

Salt, to taste
For Serving:

8 small soft corn tortillas (warmed)

1 avocado, sliced
-
1 cup shredded lettuce
-
1/2 cup diced tomatoes
-
1/4 red onion, finely sliced
-
Fresh coriander leaves, for garnish

Optional: pickled jalapeños, extra lime wedges
Directions
In a bowl, mix the olive oil, spices, salt, pepper, and lime juice. Add chicken thighs and toss to coat. Let marinate for at least 15 minutes (or up to a few hours in the fridge).
In a small bowl, mix together all crema ingredients until smooth. Taste and adjust salt or lime as needed. Chill in fridge until ready to use.
Preheat the BBQ or grill to medium-high. Cook chicken thighs for 5–6 minutes per side, or until cooked through and slightly charred. Let rest for a few minutes, then slice into strips.
Lay out warm tortillas. Fill each with chicken, avocado slices, lettuce, tomato, and red onion. Drizzle with lactose-free lime crema and top with coriander.
Recipe Note
Serve with grilled corn on the cob (brushed with dairy-free butter and chili-lime seasoning) and a pitcher of iced hibiscus tea or mocktail mojitos 🍹.
