Ingredients

650 g Chicken breast (skinless and boneless), about 4 pieces

200 ml Chicken stock

150 ml Lactose-free cream

50 g Plain flour

50 g Lactose-free cheese, grated

150 g Sun-dried tomatoes, drained

1 tbsp Olive oil

3 Garlic cloves, peeled and crushed

2 tsp Paprika
-
1 tsp Dried oregano
-
15 g Fresh basil leaves

1/2 Lemon, just the juice
Directions
Preheat the oven to 180°C (350°F).
Coat chicken breasts in plain flour, shaking off excess.
In an ovenproof skillet, heat olive oil over medium-high heat. Sear chicken until golden brown on both sides. Remove chicken and set aside.
In the same skillet, add crushed garlic, sun-dried tomatoes, dried oregano, and paprika. Sauté for a couple of minutes.
Pour in chicken stock and lactose-free cream, deglazing the pan. Allow the mixture to simmer for a few minutes.
Return the seared chicken to the skillet. Spoon the sauce over the chicken.
Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
Sprinkle the grated lactose-free cheese over the chicken during the last 5 minutes of baking until melted and bubbly.
Remove from the oven, squeeze lemon juice over the chicken, and garnish with fresh basil leaves. Season with salt and pepper to taste.
Serve the "Marry Me" Chicken over rice or with your favourite side, and enjoy this delightful, lactose-free dish!
