400 g tin crushed or chopped tomatoes

2 teaspoons balsamic vinegar

¼ teaspoon golden caster sugar or cane sugar

¼ teaspoon dried oregano

¼ teaspoon red pepper flakes
Directions
Heat the olive oil in a medium saucepan over a low heat. Add the minced shallot, garlic, sea salt, and a few grinds of black pepper. Cook gently for about 3 minutes, stirring often, until the shallot softens and becomes fragrant (but not browned).
- Stir in the crushed tomatoes, balsamic vinegar, sugar, oregano, and red pepper flakes.
Cover and simmer on low heat for 20 minutes, stirring occasionally, until the sauce thickens slightly and the flavours blend.
- Season with extra salt, pepper, or red pepper flakes if desired.

Make ahead: This marinara sauce keeps well in the fridge for up to 5 days in an airtight container. It also freezes beautifully for up to 3 months—just thaw and reheat gently.
