4 ripe peaches, halved and pitted

2 tbsp olive oil

1 tsp ground cinnamon

1 tsp brown sugar (optional)

4 scoops lactose-free vanilla ice cream

2 tbsp honey or maple syrup (for drizzling)

Fresh mint, for garnish (optional)
Directions
Brush the cut sides of the peaches with olive oil or melted dairy-free butter. Sprinkle with cinnamon and a little brown sugar if you prefer extra sweetness.
Preheat your BBQ to medium heat. Place the peaches cut-side down on the grill and cook for about 4-5 minutes, or until they have nice grill marks and are slightly softened. Flip them over and cook for another 2–3 minutes to warm through.
Place the grilled peaches on a plate, and top each half with a scoop of lactose-free vanilla ice cream. Drizzle with honey or maple syrup, and garnish with fresh mint if desired.
Recipe Note
