This Lactose-Free Baked Feta Pasta is a flavourful and satisfying dish that brings together creamy, melted lactose-free feta cheese, bursting cherry tomatoes, and perfectly cooked pasta. Roasted with a touch of extra virgin olive oil and seasoned with garlic and fresh basil, the tomatoes create a delicious, savoury base that complements the rich feta. A reduced amount of olive oil ensures this dish remains light while still delivering indulgent flavours. Served with a sprinkle of fresh basil, it’s the perfect balance of creamy, tangy, and herby goodness. Ingredients

225g cavatappi pasta (or pasta of your choice)

500g cherry tomatoes

225g block lactose-free feta cheese

Splash of Extra virgin olive oil

¼ teaspoon salt

¼ teaspoon black pepper

2 garlic cloves, minced

25g fresh basil, chopped (plus extra for serving)
Directions
Preheat your oven to 200°C (fan 180°C) or 400°F.
Place the cherry tomatoes in an oven-safe baking dish. Drizzle the olive oil over the tomatoes, and season with salt and pepper. Toss everything together to coat the tomatoes evenly.
Place the block of lactose-free feta cheese in the center of the dish, surrounded by the tomatoes. Flip the feta a couple of times to coat it in the olive oil and seasonings.
Bake in the preheated oven for 35 minutes, or until the tomatoes have burst and the feta cheese is melted.
While the tomatoes and feta are baking, cook the pasta according to the package instructions in a pot of salted water until al dente. Reserve 120ml of the cooking liquid, then drain the pasta.
Once the tomatoes and feta are done, add the minced garlic and chopped basil to the baking dish, and toss everything together to combine.
Add the cooked pasta to the baking dish and toss everything together, adding a bit of the reserved pasta water if you’d like to adjust the consistency.
Garnish with extra fresh basil and serve warm.
