140g lightly Salted Spreadable Blend of Butter & Rapeseed Oil

140g caster sugar

140g self-raising flour

2 large eggs, beaten

50g icing sugar

2 very ripe bananas, mashed

1 tsp baking powder

Handful dried banana chips, for decoration
Directions
Preheat your oven to 180°C (350°F). Grease a loaf tin with dairy-free butter and line with parchment paper.
In a mixing bowl, cream together the softened lactose-free butter and caster sugar until light and fluffy.
Gradually add the beaten eggs to the butter and sugar mixture, beating well after each addition.
Sift the self-raising flour and baking powder into the bowl, then gently fold them into the mixture until just combined.
Fold in the mashed bananas until evenly distributed throughout the batter.
Pour the batter into the prepared loaf tin and smooth the top with a spatula.
Bake in the preheated oven for 50-60 minutes, or until a skewer inserted into the centre comes out clean.
Once baked, remove the banana bread from the oven and allow it to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
While the banana bread is cooling, make the icing by mixing the icing sugar with a small amount of water until you reach a smooth, thick consistency.
Drizzle the icing over the cooled banana bread and decorate with dried banana chips.
