This Lactose-Free Banoffee Pie is a no-bake classic with a creamy twist that everyone can enjoy. It features a buttery biscuit base, rich homemade caramel made with lactose-free milk, layers of fresh bananas, and fluffy whipped lactose-free cream, all finished with a sprinkle of dark chocolate. It’s indulgent, sweet, and perfect for special occasions or an easy make-ahead dessert.

Ingredients
Base

250g lactose-free digestive biscuits, crushed

100g lactose-free spreadable butter, melted
Caramel Sauce

100g lactose-free spreadable butter

100g dark muscovado sugar

250ml lactose-free whole milk
Topping
-
4 bananas, sliced

300ml lactose-free whipping cream, whipped until soft peaks

1 small bar dark chocolate, grated
Directions
Mix crushed biscuits with the melted lactose-free butter. Press into the base and up the sides of a loose-bottomed pie tin. Chill in the fridge for 10 minutes.
In a non-stick pan, melt the butter and sugar over low heat, stirring constantly until the sugar dissolves. Add the lactose-free milk, increase the heat, and bring to a rapid boil for about 1 minute, stirring continuously until the caramel thickens and turns golden.
Pour the caramel over the biscuit base, spread evenly, and leave to cool. Chill for at least 1 hour or until set.
Remove the chilled base from the tin and place on a serving plate. Fold half of the sliced bananas into the whipped lactose-free cream and spoon on top of the caramel.
Arrange the remaining banana slices on top and finish with a generous sprinkle of grated dark chocolate.
Recipe Note
Use firm, just-ripe bananas for best texture.
