Ingredients

1 medium cauliflower (leaves removed), broken into pieces

335 ml lactose-free milk

2 ½ tbsp flour

35 g lactose-free butter

65 g lactose-free grated mature cheddar

1 ½ - 2 tbsp breadcrumbs (optional)
Directions
Preheat your oven to 200°C (180°C fan/gas mark 6).
Steam or boil the cauliflower for 5-7 minutes, or until just tender. Drain and set aside.
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, stirring constantly, to make a roux.
Gradually add the lactose-free milk, whisking continuously until smooth. Bring to a simmer and cook for 3-5 minutes, until the sauce thickens.
Remove from heat, then stir in the grated cheese until melted. Season with salt and pepper to taste.
Place the cooked cauliflower in an ovenproof dish. Pour the cheese sauce over the top, covering the cauliflower evenly. Sprinkle breadcrumbs over the top if using.
Bake for 20-25 minutes, or until the top is golden and bubbly.
