2 chicken breasts, diced

1 medium onion, finely chopped

1 bell pepper, diced

1 can (400g) chopped tomatoes

1 cup lactose-free cream

2 teaspoons dried basil

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

200g uncooked pasta (penne or fusilli)

1 ½ cups lactose-free shredded cheese

Fresh basil, chopped
Directions
Preheat your oven to 190°C and lightly grease a 9x13-inch baking dish.
Cook the pasta according to the package directions, then drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 7-8 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
Add the chopped tomatoes, lactose-free cream, basil, oregano, salt, and pepper to the skillet. Stir to combine and simmer for 5-7 minutes until the sauce thickens slightly.
Add the cooked chicken back into the skillet, along with the drained pasta. Stir well to coat everything in the sauce.
Transfer the chicken and pasta mixture to the prepared baking dish. Top with lactose-free shredded cheese if desired. Bake for 20-25 minutes, or until the cheese is melted and golden.
