1 large egg and 1 large egg yolk (room temperature preferred)

¼ teaspoon vanilla extract

375g all-purpose flour

1 ½ teaspoons cream of tartar

1 teaspoon baking soda

½ teaspoon table salt
Cinnamon Ripple

100g light brown sugar, firmly packed

1 tablespoon ground cinnamon

⅛ teaspoon table salt

57g lactose-free butter, very soft/barely melted
Directions
Preheat oven to 175°C and line baking sheets with parchment paper.
In a large mixing bowl, use an electric mixer to cream the lactose-free butter and sugar until well combined.
Mix in the egg, egg yolk, and vanilla extract, stirring until smooth.
In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
In another bowl, whisk together brown sugar, cinnamon, and salt. Add the softened lactose-free butter and mix until it forms a paste.
Dollop spoonful’s of the cinnamon ripple over the dough. Gently fold it in with a spatula, being careful not to overmix to maintain a distinct swirl.
Scoop dough into 1 ½ tablespoon-sized portions. Optionally, roll into smooth balls.
Place cookie dough balls on the prepared baking sheets, spacing them at least 2 inches apart. Bake for 10-11 minutes, until the edges are set.
Let cookies cool completely on the baking sheet before serving.
