225g pasta of choice (penne, fettuccine, or spaghetti)

1 cup lactose-free milk

1/2 cup lactose-free cream

1/2 cup lactose-free grated style cheese

1 tablespoon corn starch (optional, for thickening)

Directions
Bring a pot of salted water to a boil, cook pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the onions and garlic, sauté for 2-3 minutes until soft and fragrant. Add sliced mushrooms and cook until they release their moisture and turn golden brown, about 5-6 minutes.
Stir in lactose-free milk and bring to a simmer. For extra creaminess, add lactose-free cream. If you prefer a thicker sauce, mix corn starch with a little water and add to the sauce, simmering for a few more minutes. Stir in the grated lactose-free Parmesan-style cheese, thyme, salt, and pepper.
