This Lactose-Free Creamy Tuscan Chicken is a rich and comforting one-pan dish that’s big on flavour without the dairy. Juicy, golden pan-fried chicken breasts are nestled in a velvety sauce made with lactose-free cream, garlic, cherry tomatoes, and spinach. Finished with a sprinkle of Parmesan-style cheese and a squeeze of lemon, it’s the perfect balance of creamy, savoury, and fresh. Ideal for a cosy dinner, yet impressive enough for guests and completely lactose-free.

Ingredients
- 1 tbsp extra-virgin olive oil

4 boneless, skinless chicken breasts
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 1 tsp dried oregano
- 45g lactose-free butter or dairy-free spread
- 3 garlic cloves, finely chopped
- 200g cherry tomatoes, halved
- 100g baby spinach

Directions
Heat the olive oil in a large frying pan over medium heat.
Season the chicken breasts with salt, pepper, and oregano.
Cook for about 7–8 minutes per side, or until golden and fully cooked through (internal temp: 74°C).
Remove from the pan and set aside.In the same pan, melt the lactose-free butter over medium heat. Add the garlic and cook for about 1 minute, until fragrant.
Pour in the lactose-free cream and add the Parmesan-style cheese.
Stir well, bring to a gentle simmer, then reduce the heat.
Let the sauce thicken slightly for around 3 minutes.Return the chicken to the pan and spoon the sauce over the top.
Simmer gently for 5–7 minutes until everything is hot and coated in sauce.Plate up with lemon wedges on the side for a fresh zing.
Serve with mashed potato, pasta, rice, or crusty bread.
