Ingredients

2 Large Eggs

80ml Lactose-Free Whole Milk

40ml Double Cream
-
4 Thick Sliced White Bread

1tsp Vanilla Extract
-
½tsp Cinnamon
-
2tbsp Butter
-
2tbsp Vegetable Oil

Icing Sugar

Fresh Berries

Maple Syrup

Directions
In a mixing bowl combine eggs, lactose-free milk and cream, vanilla, cinnamon and whisk together
Lay the brioche slices in a single layer in a shallow dish and pour the mixture over them. Allow them to soak for 2-3 minutes then flip them over and soak for an additional 2 minutes.
In a frying pan, heat 1 tablespoon of vegetable oil and butter over medium heat until foaming. Gently lift 2 slices of the soaked brioche from the dish and place them in the frying pan. Cook for 3 minutes on each side until they are golden and crispy.
When golden and crispy transfer them to a wire rack set over a baking tray in a warm oven, and repeat the process with the remaining slices.
Optional
Serve the French toast dusted with icing sugar and topped with fresh berries, if desired.
