This simple lactose-free spinach frittata is a tasty, wholesome dish that’s easy to make and perfect any time of day. Packed with fresh spinach, crispy bacon, and creamy eggs, it’s a great way to enjoy a lactose-free meal without sacrificing flavour.

Ingredients

1 onion, peeled and chopped

1 garlic clove, minced

8 boiled potatoes, sliced

1 tbsp olive oil

50 g diced bacon

A handful of baby spinach leaves

8 eggs

200 ml lactose-free cooking cream

Flake salt and pepper, to taste
Directions
Preheat the oven to 200°C (fan 180°C / 400°F).
Heat the olive oil in an ovenproof frying pan over medium heat. Add the chopped onion, minced garlic, diced bacon, and sliced boiled potatoes. Fry until the onion is soft and bacon starts to crisp.
Add the baby spinach leaves and cook until they have wilted down.
In a bowl, beat the eggs with the lactose-free cooking cream, then season with flake salt and pepper.
Spread the filling evenly in the pan, then pour the egg and cream mixture over it.
Transfer the pan to the preheated oven and bake for about 20 minutes, or until the frittata is set and golden on top.
Recipe Note
For extra flavour, try adding fresh herbs like parsley, chives, or basil.
You can easily swap bacon for cooked sausage or omit it for a vegetarian version.
Use any leftover cooked potatoes or roast potatoes for a delicious twist.
Make sure to use an ovenproof pan to safely transfer the frittata to the oven.
