These Lactose-Free Halloumi Burgers are a delicious vegetarian option, featuring crispy, golden halloumi slices marinated in olive oil, lemon, and herbs. Served in a soft bun with fresh veggies like lettuce, tomato, and red onion, they make for a satisfying, quick, and flavourful meal.
Ingredients

2 large blocks of lactose-free halloumi, sliced into 1-inch thick slices

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 tablespoon fresh parsley, chopped

Lettuce leaves

Tomato slices

Red onion slices

Pickled cucumbers or gherkins (optional)

Ketchup or a lactose-free spread (optional)

Salt and pepper, to taste
Directions
In a small bowl, mix together the olive oil, lemon juice, oregano, smoked paprika, salt, and pepper. Brush the halloumi slices on both sides with the marinade and let them sit for about 5-10 minutes to soak up the flavours.
Heat a non-stick skillet or grill pan over medium-high heat. Cook the halloumi slices for 2-3 minutes per side, until golden and crispy on the outside. You can also grill them for a smoky flavour if you prefer.
Lightly toast the burger buns in the skillet or oven until they are golden and slightly crisp.
On the bottom half of each bun, layer a couple of lettuce leaves, followed by a cooked slice of halloumi. Top with tomato slices, red onion, pickled cucumbers (if using), and fresh parsley. Spread ketchup or your preferred lactose-free sauce on the top half of the bun.
Place the top bun on the assembled ingredients, press down lightly, and serve immediately.
Recipe Note
You can add extra toppings like avocado or a lactose-free cheese alternative for even more flavour. These burgers are perfect served with sweet potato fries or a side salad!
