This naturally gluten-free and lactose-free cake is a zesty, moist, and aromatic treat that's perfect for any occasion. Made with whole oranges including the peel and pith, it offers a burst of citrus flavor complemented by the nutty richness of almond flour. Inspired by traditional Italian recipes, this cake is simple to prepare and sure to impress.

2 medium oranges (preferably thin-skinned)

250g almond flour (ground almonds)

5 large eggs

200g granulated sugar

1 tsp baking powder

Pinch of salt
Directions
Wash the oranges thoroughly. Place them in a saucepan, cover with water, and bring to a boil. Simmer for 1 hour until soft. Drain and let them cool.
Preheat your oven to 180°C (350°F). Grease and line a 23cm (9-inch) springform cake tin.
Cut the cooled oranges in half, remove any seeds, and blend the entire fruit (including peel) into a smooth purée.
In a large bowl, beat the eggs and sugar until light and fluffy. Add the orange purée, almond flour, baking powder, and salt. Mix until well combined.
Pour the batter into the prepared tin. Bake for 45–55 minutes, or until a skewer inserted into the centre comes out clean.
Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely. Dust with icing sugar before serving, if desired.
Recipe Note
The cake keeps well in an airtight container for up to 5 days.
Delicious on its own or paired with a dollop of lactose-free whipped cream or a scoop of lactose-free vanilla ice cream.
