Ingredients
For The Berry and Peach Filling

450g sliced peaches (fresh or thawed from frozen, drained)

150g raspberries

100g blackberries

150g caster sugar

3 tbsp cornflour

Juice and zest of 1/2 lemon

1 tsp vanilla extract

Pinch of sea salt
For the Topping
-
125g plain flour
-
2 tbsp caster sugar (plus extra for sprinkling)

2 tsp baking powder
-
1/4 tsp sea salt
-
115g cold lactose-free butter, cubed
-
120ml buttermilk
-
1 tsp vanilla extract
Directions
In a large bowl, gently combine the peaches, raspberries, blackberries, sugar, cornflour, lemon juice and zest, vanilla, and a pinch of salt. Transfer into a large cast iron skillet.
- In a separate bowl, mix the flour, sugar, baking powder, and salt. Rub the cold butter into the flour using your fingertips until the texture resembles breadcrumbs.
- In a small jug, stir the lemon juice into the milk and leave for 2 minutes. Then mix in the vanilla and add to the flour mixture. Stir just until combined.
Spoon dollops of the biscuit topping over the fruit. Sprinkle lightly with more sugar.
Cover the skillet with foil or a lid and place it on a campfire grate or medium BBQ. Cook for 20–25 minutes until the topping is golden and the fruit is bubbling.

No BBQ? No Problem!
You can easily make this cobbler in the oven instead. Preheat your oven to 190°C (170°C fan) / 375°F / Gas Mark 5, place the filled skillet or baking dish on the middle shelf, and bake uncovered for 30–35 minutes, or until the topping is golden and the fruit is bubbling.
