This Lactose-Free Quiche Lorraine is a hearty and flavourful classic with a twist, it's made entirely without lactose, so everyone can enjoy it! Featuring a golden, buttery crust filled with creamy egg, savoury smoked ham, lactose-free mature cheddar, and fragrant herbs, it’s perfect for brunch, lunch, or a light dinner. Serve it warm with a crisp salad or roasted vegetables.

Ingredients
For the Crust

100g lactose-free butter

175g wheat flour

½ tsp salt

1½ tbsp cold water
For the Filling
-
150g smoked ham, diced
-
3 egg
-
200ml lactose-free sour cream
-
2½ tbsp wheat flour
-
2 tsp Herbes de Provence
-
100g Lactose Free Mature Cheddar, Grated
Directions
Prepare the Pastry Crust
In a large bowl, rub the cold, cubed butter into the flour with your fingers until it resembles breadcrumbs.
Add salt and cold water, and mix until a dough forms.
Press the dough evenly into a greased 22cm baking tin (preferably a springform).
Cover and refrigerate for at least 30 minutes.
Blind Bake the Crust
Preheat your oven to 200°C (top & bottom heat).
Prick the base of the chilled crust with a fork to prevent bubbling
Bake the crust for 10 minutes until lightly golden.
Filling
Spread the diced ham evenly over the pre-baked crust.
In a bowl, whisk together the eggs, lactose-free sour cream, flour, and Herbes de Provence
Pour the egg mixture over the ham and top with grated cheese.
Return the quiche to the oven and bake for around 40 minutes, or until the filling is set and the cheese is melted and golden.
Let it cool slightly before slicing. Best enjoyed warm with a crisp green salad.
Recipe Note
Make it Gluten-Free: Swap the wheat flour for a gluten-free flour blend to make this recipe suitable for those with gluten intolerance.
Storage Tip: The quiche can be stored in an airtight container in the fridge for up to 3 days. Reheat gently in the oven or enjoy cold.
Make Ahead: You can prepare the crust and filling separately a day in advance. Assemble and bake fresh on the day for best texture.
