Preheat your oven to 220°C (200°C for fan ovens, 425°F, gas mark 7).
In a bowl, whisk together the flour, eggs, lactose-free milk, salt, and pepper until you have a smooth batter. Allow it to rest while you prepare the sausages.
Place the sausages in a baking dish or a deep roasting tin. Drizzle with 2 tablespoons of vegetable oil. Bake in the preheated oven for about 10 minutes, until the sausages start to brown.
Once the sausages have started to brown, quickly pour the batter over them. Ensure the sausages are evenly distributed in the dish.
Return the dish to the oven and bake for 25-30 minutes or until the batter is risen, golden, and crisp.
While the toad in the hole is baking, make the gravy. In a saucepan, heat 2 tablespoons of vegetable oil. Add 2 tablespoons of flour and cook for 1-2 minutes to make a roux. Gradually whisk in the lactose-free broth, ensuring there are no lumps. Simmer the gravy until it thickens. Season with salt and pepper to taste.
Once the toad in the hole is cooked, serve it with the delicious lactose-free gravy. Optionally, you can pair it with mashed potatoes and steamed vegetables.
