Follow our step-by-step guide to crafting a simple, lactose-free macaroni cheese. This classic comfort food favourite, rich with cheese flavour without the lactose.

400g Macaroni

450ml Lactose-Free Milk

150g Lactose-Free Cheddar Cheese

150g Lactose Free Mozzarella

100ml Lactose-Free Cream

3tbsp Lactose-Free Butter

3tbsp Flour

1tbsp White Wine Vinegar

Salt and pepper to taste

Directions
Preheat your oven to 180°C (350°F). Grease a baking dish and set aside.
Cook the macaroni according to the package instructions until al dente. Drain and set aside.
In a saucepan, melt the lactose-free butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes, stirring constantly, until the mixture turns slightly golden.
Slowly pour in the lactose-free milk while whisking continuously to avoid lumps. Cook the mixture for a few minutes until it thickens and becomes smooth.
Stir in the lactose-free cream and white wine vinegar. Cook for another minute, then remove the saucepan from the heat.
Add the shredded lactose-free cheddar cheese and mozzarella cheese to the sauce. Stir until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
Add the cooked macaroni to the cheese sauce and stir until well coated.
Transfer the mac and cheese mixture to the prepared baking dish. If desired, sprinkle breadcrumbs over the top for an extra crunchy topping.
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the cheese is bubbling.
Remove from the oven and let it cool for a few minutes before serving. Enjoy your delicious lactose-free mac and cheese!
