These Lactose-Free Chocolate Pancakes are rich, fluffy, and perfect for anyone with lactose intolerance. They’re loaded with deep chocolate flavour, making them a delicious treat for breakfast or brunch. The best part? They’re just as easy to make as regular pancakes!
Normally, I like to switch things up by making half a stack of regular pancakes first, then adding cocoa powder to the remaining batter to turn the rest into chocolate pancakes. It’s the best of both worlds in one stack! But if you're craving all chocolate, this version will satisfy your sweet tooth while being gentle on your stomach.
Perfect for pairing with maple syrup, fresh berries, or a little lactose-free whipped cream, these pancakes are a great way to start your day with a tasty twist.
Ingredients
-
100g Plain Flour
-
30g Cocoa Powder
-
2 Large Eggs
-
300ml Lactose-Free Milk
-
50g Caster Sugar
-
½ tsp Baking Powder
-
Pinch of Salt
-
30g Melted Lactose-free Butter
Directions
In a large mixing bowl, combine the plain flour, cocoa powder, caster sugar, baking powder, and a pinch of salt. Whisk together until well blended.
In a separate bowl, whisk the eggs. Then add the lactose-free milk and melted lactose-free butter. Mix until fully combined.
Pour the wet ingredients into the dry ingredients. Gently fold until just combined. Be careful not to overmix; a few lumps are okay!
Heat a non-stick frying pan or griddle over medium heat. Lightly grease it with a bit of lactose-free butter or cooking spray.
Pour a ladleful of batter onto the hot pan. Cook for about 2-3 minutes, or until bubbles form on the surface. Flip and cook for another 1-2 minutes, or until cooked through. Repeat with the remaining batter.
Stack the pancakes on a plate and serve warm. Top with your favourite lactose-free toppings—think maple syrup, fresh fruit, or even a dollop of lactose-free whipped cream!
