500ml Lactose-Free Cream

2 Garlic Cloves, Crushed

4 Large Red Potatoes, Very Thinly Sliced

2 tsp Fresh Thyme Leaves

160 ml Lactose-Free Grated Cheese Blend
Directions
Preheat your oven to 220°C (200°C if using a fan-forced oven). Grease a 3.5cm-deep, 21cm x 30cm baking tray.
Place the lactose-free cream and crushed garlic in a microwave-safe jug. Microwave on HIGH (100%) for 1 minute 30 seconds, or until warm.
Arrange half of the potato slices in layers, slightly overlapping, in the prepared tray. Sprinkle with half of the fresh thyme and half of the lactose-free cheese blend. Season with salt and pepper.
Pour half of the warm cream mixture over the potato layers. Arrange the remaining potato slices in layers on top. Pour over the remaining cream mixture. Cover tightly with foil and bake for 30 to 35 minutes, or until the potatoes are just tender.
Uncover the tray. Sprinkle with the remaining thyme and lactose-free cheese blend. Season with salt and pepper. Bake for a further 15 to 20 minutes, or until golden and the potatoes are tender.
Let cool slightly before serving.
