Delight in our Lactose-Free Vegetable Quesadilla! The spice mix adds delightful flavour – perfect with black beans and corn. Freezer friendly and full of goodness!
Ingredients

6 – 8 flour tortillas

200g Lactose-Free Cheddar Cheese
-
1 Onion
-
1 can of black beans
-
100g Sweetcorn
-
1 Bell Pepper
-
70g Tomato Paste
-
65ml Water
-
2 tbsp Olive Oil
-
2 Garlic Cloves
Quesadillas
Filling
Directions
Mix the spice mix ingredients in a small bowl.
Heat oil in a skillet over high heat. Add onion and garlic, cook for 2 minutes. Add bell pepper, cook for 1 minute.
Add black beans, corn, tomato paste, water, and Spice Mix. Cook for 2 minutes. Transfer to bowl, cool.
Place tortilla on work surface. Sprinkle one side with a bit of cheese, top with Vegetable Filling. Sprinkle with corn, coriander, and top with cheese. Fold in half.
Preheat non-stick skillet over medium-low heat. Place quesadilla in skillet, press down lightly, cover with lid. Cook for 3 minutes until underside is golden brown and crispy.
Carefully flip over the folded edge. Press down lightly. Cook for 3 minutes until crispy.
Transfer to cutting board, cut in half. Serve immediately!4o
