600g Desiree Potatoes, halved

40g Coarsely Grated Lactose-Free Cheddar

20g Melted Lactose-Free Butter

Sour Cream

Sweet Chilli

1 tbsp Smoked Paprika

Directions
Preheat the oven to 220°C/200°C. Line a large baking tray with baking paper. In a large saucepan, cover the potatoes with water and bring to a boil. Cook for 5 minutes, then drain and set aside to cool.
Remove and discard the potato skins. Coarsely grate the potatoes and chop them with a large knife. Transfer to a bowl. Roughly chop the cheese and add it to the bowl along with the butter and seasoning. Mix well with your hands.
Optionally, add smoked paprika for extra flavour. Take level tablespoons of the mixture and shape into oval-shaped balls using damp hands. Place on the prepared tray and spray with oil. Bake for 10 minutes, then turn and bake for another 10 minutes until golden and crisp.
In a small serving bowl, combine the sour cream and sweet chili sauce. Serve with the potato gems.
