Ingredients

6 – 8 flour tortillas

200g Lactose-Free Cheddar Cheese

500g Ground Beef Mince

1 Bell Pepper

1 Onion
-
100g Sweetcorn
-
65ml Water
-
2 tbsp Tomato Paste

2 garlic cloves
-
½ tbsp olive oil

2 ½ tbsp Olive Oil

1 tsp Onion Powder
-
1 tsp Dried Oregano
-
1 tsp Salt
-
2 tsp Paprika
-
2 tsp Cumin
-
¼ Cayenne Pepper

¼ tsp Black Pepper

Filling
Spice Mix
Directions
Mix the spice mix ingredients in a small bowl.
Heat oil in a skillet over high heat. Add onion and garlic, cook for 2 minutes.
Add beef and cook, breaking it up as you go. Once it changes from pink to brown, add bell pepper. Cook for 1 minute.
Add tomato paste, water, and Spice Mix. Cook for 2 minutes. Transfer to bowl, cool.
Place tortilla on work surface. Sprinkle one side with a bit of cheese, top with Beef Filling. Sprinkle with corn, coriander, and top with cheese. Fold in half.
Preheat non-stick skillet over medium-low heat. Place quesadilla in skillet, press down lightly, cover with lid. Cook for 3 minutes until underside is golden brown and crispy.
Carefully flip over the folded edge. Press down lightly. Cook for 3 minutes until crispy.
Transfer to cutting board, cut in half. Serve immediately!
